I do all my knitting in double knit now because it produces clean stockinette on both side. It also allows flexibility for color work because there are no floats and different colors on each side. Because it produces a double thick fabric, it stays flat and needs little blocking. But, it does use double the amount of yarn and is generally too thick for garments other than hats and scarves.
Slow striping is particularly suited for double knit because as each color changes, it make a complex display. It's hard to find slow-striping in cotton. I used the yellow-purple and yellow green to blue for the attached picture. It took most of both skeins do this 18" diameter table decoration.
The yarn has a lot of stretch for cotton. The colors are bright. The yarn has a sheen. It is a true DK weight. It has at least 8 strands. They are tightly wound but do come apart while knitting. Have to be careful not to split I while knitting. Also, while happily pre-wound, The outside yarn comes loose and makes a tangled mess.
